Menu Plan – Week of March 12

Since we spent almost an entire week in the hospital, I didn’t make any of the meals I had planned for last week. It’s amazing how much money you can save on groceries when your husband is unable to eat… not that I recommend it. It certainly wasn’t any fun! So I pretty much have a repeat of last week’s menu.

Here’s what I have planned for this week:

Monday: Beans and veggies over quinoa

Tuesday: Salmon with roasted potatoes and steamed veggies

Wednesday: Pancakes (Jesse has a meeting, I’m having something he doesn’t care for.)

Thursday: Sticky crock pot chicken with veggies

Friday: Leftover chicken

Five Question Friday – March 9

1. Are you looking forward to the time change this weekend?

I am not looking forward to missing out on a hour of sleep. However, I do think it’s kinda silly that people make such a big deal about it. The time I go to bed often varies by more than an hour, I hardly think an hour time change is enough to notice.

2. Are you getting the new iPad/would you want a iPad?

My husband sure has his mind set on getting one. I’m sure I would enjoy using it, but I really don’t feel the need to have one. We’ve decided that it all depends on how our taxes turn out. With me leaving my job last year and the business doing so well, I’m a little worried about our estimated tax payments being accurate. If our estimates were good, we should have cash available for one!

3. If money was not a problem, what is the one thing you would splurge on?

This is a tough one for me because I am such a saver so it’s hard to think about what I would buy. I guess I would like to travel some, make memories seeing some new places. Or buy a new house with land so that I can grow some of my own food.

4. How did you and the Mr. (or Mrs.) meet?

We met at church through a mutual friend. We dated all through my years of college and were married shortly after I graduated. We’ve been together ten years now!

5. Summer is right around the corner. Bikini or one-piece?

I have both choices available. I probably wear a two-piece more often because it’s just more comfortable. I’m happy to be thinking about warm weather clothes again and be able to stop being “freezing.”
